You can never go wrong with meat and a cheesy potato side dish

Want a quick and easy meal? Beef Roast. Throw it in the Crockpot and head to work. When you get home dinner is all but done. Add your favorite side dishes and dinner is served.
First, let's talk roast. I like the sirloin tip roast. However, other cuts are just as good. The Fresh Market add that came out today has Boneless Rump Roast for $2.49 and Cross Rib Roast for $2.79. Both are great prices. I have never gotten a bad cut of meat from the Fresh Market. Now, let's talk side dishes. Normally, I cut and peel potatoes and throw some baby carrots in with the roast. Everything is done when you get home. Today, I chose to fix something different because Doug wanted cheesy hashbrowns. I will add some frozen mixed vegetables and dinner is served.

Cheesy Hashbrowns

Ingredients:
2 Bags Frozen Southern Hashbrowns
16 ounces Sour Cream
2 Cans Cream of Mushroom Soup
2 Cups Shredded Cheddar Cheese

Directions:
 Mix all other ingredients and place in buttered casserole dish. Cook at 350 degrees for 30 - 45 minutes. I like to sprinkles some extra cheese on top when I make it. You can also add durkees for extra crunch.

A quick meal for $5.00

Sorry I did not have time to post this weekend. I was at the bowling tournament the last three weekends. Now everything is starting to get back to normal. So, today, we have to get our haircut and will be there for awhile. So, I am going to post a great cheap meal. Problem is, it ends today.

Your local fresh market has a meal deal for $5.00. You get:
1 12 in Freschetta Pizza (your choice of flavor)
1 bag of dole salad mix
1 2-liter coke product
1 loaf fresh baked bread

Even if you have 2 buy two meals it is a great deal!

Is it Friday Yet?

Yes it is! Like many people, by Friday everyone is ready for a break and so am I. In my world, Fridays mean bowling. Therefore, I never want to cook dinner then go bowl. So, we usually have leftovers. So, in the spirit of quick and easy meals, here is a sandwich that is sure to please everyone.

Italian Subs
Sandwich hoagies
Sandwich size Pepperoni
Salami
Ham
Sliced Mozzerella Cheese
Italian Dressing


Place the bottom of th hoagie on a cookie sheet. Layer ham, salami, pepperoni, cheese. Sprinkle italian dressing on the top part of the hoagie and place on cookie sheet as well. Cook for 10-15 min @375. Make sure you keep an eye on it because you do not want burnt bread and since some breads are thicker than others you may need to adjust your cookie time. Serve with a pasta salad or chips.

Chicken Casserole

It's Thursday and we do not have anywhere to be tonight so I actually have time to work on dinner. Tonight we are having chicken casserole, green beans, peaches and fresh baked bread. This is actually a fairly easy recipe.

Chicken Casserole
Ingredients:
4-5 Chicken Breasts, Cooked and Cubed (I actually just tear mine into little pieces)
1 can Cream of Celery Soup
1 small Onion, Diced
10 ounces Sour Cream
2 cups Shredded Cheddar Cheese
1 Box Stove Top Stuffing, prepared per box

Directions:
Step 1: Preheat the oven to 350 Degrees
Step 2: Mix Soup, Sour Cream, and Onion
Step3: Place Chicken in the bottom of casserole dish
Step 4: Put soup mixture on top of chicken
Step 5: Sprinkle Cheese over soup mixture
Step 6: Put Stove Top over Cheese
Step 7: Cook for 45 minutes or until heated through (You can also cook this in the microwave for 15 minutes, rotating every 5 minutes


For the vegetables, I have learned that flash frozen has a natural flavor and hold their nutrients better than canned vegetables. They are also very inexpensive.
Easy enough, right????
